Grilled Zucchini and Pear Salad

Spring in a salad form!

This grilled pear and zucchini dish is the perfect way to celebrate the season now that spring has arrived! Pairing our sweet pears with in-season zucchini for a fresh, sweet & savoury combo that’s made for sunny afternoons outdoors.

Best part? The dressing can be stored in the fridge and drizzled over your morning eggs on toast for an easy flavour boost!

Ingredients

  • 4 zucchini, sliced lengthwise into 1/4-inch thick strips
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1 tbsp brown sugar (or honey)

  • 1 cup fresh spinach or lettuce

  • 2 ripe pears, thinly sliced
  • 1/2 cup crumbled goat cheese or chopped mozzarella (optional)

  • 1/3 cup chopped walnuts or mixed nuts

Dressing

  • 2 tbsp Dijon mustard
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup cream 
  • 2 tbsp honey
  • 1 tsp crushed garlic 
  • 1/4 tsp sea salt (adjust to taste)
  • Freshly cracked black pepper, to taste

Directions

  1. Preheat your grill or grill pan over medium-high heat.

  2. Brush the zucchini slices with olive oil and sprinkle with salt.
  3. Grill the zucchini strips for 2-3 minutes on each side, or until grill marks appear and the zucchini is tender. Remove from heat and set aside on a paper towel. Start by brushing the pear slices with olive oil and sprinkle with a little sugar. Whilst grilling they will caramelise slightly. Once done, remove from the grill and set aside.

Prepare the Dressing

  1. In a small bowl, whisk together all the ingredients for the dressing until smooth and creamy.

Assemble the Salad

  1. To a salad bowl or platter, lay out the fresh spinach topped with the grilled zucchini and thinly sliced pears.

  2. Adding crumbled goat cheese or chopped mozzarella cheese and some chopped mixed nuts or walnuts.

  3. Drizzle the honey mustard dressing over the salad and toss gently to combine.

  4. Serve immediately and enjoy!
