Ingredients

400g feta or goat’s cheese
- 1 tbsp olive oil
- 1 clove garlic, thinly sliced
- 1/2 cup mint, loosely packed
- 1 lemon, juice only
- Freshly ground black pepper
- 3-4 tbsp Greek yogurt
Directions

Place the feta, olive oil, garlic, mint, and lemon juice into a food processor
- Blend until mixture begins to smooth out
- Add the Greek yogurt to your blender one tablespoon at a time, blending between each addition until light and creamy. You may not need all 4 tbsp, stop when the texture is fluffy but still thick
- Season generously with black pepper
- Transfer to a serving bowl and garnish with extra mint leaves or a drizzle of olive oil
